  • Tasting Notes

    Barolo Riserva 2015 is a wine that arouses great emotions, thanks to its intense garnet-red color with ruby highlights. The aroma is clear and intense, offering notes of black cherry, tobacco, dried mushrooms and spices such as nutmeg and pepper, as well as balsamic aromas reminiscent of resin and mint. The palate is warm and soft, with sweet, velvety tannins that harmonize well with a fresh acid note, contributing to a long, persistent finish.

  • Vinification and Aging

    Vinification: The fermentation follows a traditional process, lasting for a medium-long period (15 days) in stainless steel vats with a floating cap, maintained at a controlled temperature (30-31°C). Subsequently, the must remains in contact with the skins for an additional 15 days to optimize the extraction of polyphenolic substances and initiate the subsequent malolactic fermentation.

    Aging: The wine undergoes one year of aging in Allier oak barriques followed by two years in oak casks, either from Allier or Slavonian oak. After a gentle clarification, the wine is bottled for further maturation, the duration of which depends on the characteristics of the vintage, but never less than 62 months, with the first 30 months spent in wooden barrels.
