Tasting Notes
Pale yellow with green highlights, this wine has a mineral nose with hints of gunflint, toasted aromas and a touch of dried fruit. On the palate, the attack is clean and round, finishing on floral and honeyed notes.

Vinification and Aging
As soon as it arrives at the winery, the harvest is whole-cluster pressed. Static cold settling is carried out for 24 to 48 hours. Fermentation temperatures are controlled by circulating cold water. Part of the wine is fermented in oak barrels, while the rest is vinified in stainless steel tanks.
The wine is aged on lees with stirring of the lees. The two wines are blended before bottling (8 to 9 months after harvest).

Terroir
The Saint-Joseph appellation stretches for some fifty kilometers along the right bank of the Rhône, from Chavanay in the north to Guilherand-Granges, near Valence, in the south. The vines, mainly east-facing, grow on steep slopes of gneiss, granite and sometimes schist, punctuated by layers of loess. This diversity of soils brings complexity, volume and tension to the Deschants cuvée.
