Tasting Notes
As expected, the 2016 vintage stands out for its remarkably deep color, with harmoniously integrated alcohol richness. It is characterized by fruity expression, freshness, assertive character and subtle elegance. The Cabernet Francs, with their dazzling vivacity, magnify this exceptional Angélus vintage and captivate with their unrivalled quality: a caress of silky tannins, velvety softness and bewitching spicy aromas. They rival the Merlot in elegance, offering a powerful aromatic palette of black fruits and spices.

Vinification and Aging
In oak and stainless steel vats for the Merlot, in concrete vats for the Cabernet Franc. Cold maceration at 8°C for some vats, depending on grape characteristics, for 4 days to a week. Alcoholic fermentation temperature up to 28°C. Post-fermentation maceration at 28 to 30°C, for 1 to 3 weeks.
20 to 22 months aging in new fine-grain French oak barrels, with medium carbonation for the Merlot and part for the Cabernet Franc. Part of the Cabernet Franc, selected for its particularly subtle aromas, is matured in 30hl tuns.
